You don’t have to go to a restaurant to order fancy food like Pappardelle, you can make it right at home. It’s easy to make and even easier to eat with the cheesy reggiano and colorful spinach and sage.

Ingredients
- 12 oz. pappardelle pasta
- 2 Tbs. extra-virgin olive oil
- 2 Tbs. butter, diced
- 1 C. fresh ricotta cheese
- ¼ C. Parmigiano-Reggiano cheese, freshly grated
- 1 Tbs. chopped sage
- 10 oz. baby spinach
- 4 scallions, thinly sliced
- Salt and freshly ground pepper to taste
Directions
Boil the pasta until it’s al dente. In a saucepan, heat the oil and saute the scallions and sage for 2-3 minutes. Add in the spinach and stir until it’s wilted. Add in the pasta and butter and toss it with the spinach and scallions. Add the Reggiano cheese and a ladle of the pasta water. Stir and add more water as needed until the sauce is creamy. Add in the ricotta and continue to stir on medium heat until everything is well mixed and creamy. Serve with extra Reggiano.
